Newbie here w/ Red Pocket but do these expire? Just curious if I should purchase two and save one for next year or can I load them both at once to get 2 years worth? Also another question is, do they allow roaming?

Red Pocket has had good sales the last few years for 5-10 days around Black Friday and Cyber Monday. Ebay has also typically had sitewide coupons for a day or two in this period, that you can combine with Red Pocket sale price.

I'd just buy one year now, and plan on buying another year, next BF / CM.

Also, the plans have gotten better over the last couple years (more data etc. for same price). So that could happen again next near.

Also if you have an iPhone, I would recommend going with the Verizon network option, rather than AT&T. AT&T network on Red Pocket has issues with MMS (picture and group messages when sending to folks who use Android (sending to other iPhones uses iMessage)). Verizon option has speed capped at 5mbps, while AT&T is uncapped, but this isn't a problem for most people.

Can you purchase these to renew your plan as well or is this just for new customers? Also can you port from AT&T to AT&T service with Red Pocket or do you need to be on a different carrier first?

Yes (have to use within 1 year from purchase date) and yes, you can port directly.

If you have an iPhone, you should go with any of the other 3 networks - just not the AT&T. You should be able to get VoLTE on T-Mobile.
