have adata xpg ram on z370 mb with i7-8700k works good no hiccups at all built anither z370 with g.skillz ram and adata is comparable in speed to that ram

Where you able to hit 3000mhz? What mobo do you have?

I've been struggling to find RAM with the specs I want on my mobo's QVL - 8700k + ASRock Z370 Killer sli/ac.

yes i have an asrock z370 pro4, in the bios just enable xmp profile and it let's you choose what frequency you want, no problems, easy and i'm a first time pc builder

Yes, you'll just be throttled to the motherboards supported output.
You might be able to find cheaper ram for your needs though.
