It's a specialty tool for sure. It's not nearly as versatile and thus won't likely be used as often as, say, a mixer or a food processor. But it's used to cut something into long thin strips, or slices/wafers. It can also peel your fruits/veggies.

Some use them for slicing/cutting apples. I think most uses are for different size/shape fruits/veggies for salads, and side dishes. Just to add more interest, different textures, etc. Paleo, and other specialized diets have many recipes that replace traditional American ingredients with veggies. Spiralizing zucchini or spaghetti squash is frequently used as a faux-pasta.

As someone learning the ropes of cooking but whose wife owns a stand mixer what type of recipes is this good for? Can't think of a time I've ever really needed to spiralize anything.
