Price seems to hang around low 200's then periodically drop down to this.

I run a beef jerky side business out of my home and have produced over 1000 pounds of wet beef into jerky with this thing alone in the last couple years. This is the model that reaches a temperature of 165 on its own, meaning you don't need to oven your jerky afterwards to ensure it was cooked safely. You will need to rotate the trays during dehydration as the hot air is not evenly distributed, it is cooler on the bottom and upper trays than it is in the middle. This is a great investment at this price. I recommend going with this instead of risking your health and having longer dehydration times with a lesser dehydrator.

According to camelcamelcamel this is the lowest price since 2012. MIne is a montgomery wards rebranded and is 30 years old and does a great job. Good eye OP. repped.

I've been wanting a dehydrator but this thing is huge. I'm not sure I could put it to use enough to justify. What do people use such large dehydrators for?

This is almost commercial grade. Good deal if you need big dehydrator. I have same brand but smaller model for years. Reliable like tank.

I bought one of these (spent a lot more than this price) to bake bread with sprouted grain. But it was more trouble than it was worth. I have a garden and tried drying various stuff. Herbs, various veggies, kale chips (ugh). One thing that comes out great is bananas, but again, more trouble than it's worth. I wish I hadn't purchased the thing. It's enormous and sits in a closet shelf.
