Newbie question: Can this physically be left in the "off" position by accident? Or can you always override on/off remotely?

You can always override remotely. There is no physical off. It is more like a toggle.

No. The paddle returns to its neutral position after depressing either lower/off or the upper/on portion of the paddle.
