depend on the type of food you cooking.

a high carbon blade (like shun or many Japanese knife) has the advantage of thin cutting edge (16 degree compare to most western knife which as 22 degree), but it also has disadvantages such as been hard and brittle. it requires some extreme care when handling as one drop or hard contact (like bone) will likely result in chipping. those are not dish washer safe either.

if you do asian cuisine that requires high precision cutting, those knife would be great, otherwise, go with what you know. a rule of thumb is to buy knife from the same region as the food you eat the most.

imo, 8" is a good length for a chef knife.

They are a good brand, but you don't want a 6 inch chef's knife.

Go buy a Victorinox eight inch Chef's knife from Amazon. Smilie

Keep in mind the 6" chef knife is a small for a chef knife.

imo, 8" is a good length for a chef knife.

8" is too long. The 7" is best.

One of the best consumer mass production brand, although the linked products are not their top of the line. With above being said, they're even overkill for most house kitchens.

Very! If you're new to higher end kitchen knives I recommend going to a store like Williams Sonoma where you can handle them and see what feels best to you. Some really like these Japanese style, others much prefer the classic German style like Wusthof (which are more robust as well as more forgiving to abuse)

Chefknivestogo.com is an excellent resource. For the value, I'd recommend the victorinox chef knife or a Tojiro set

Yes, good brand, super sharp and look great. You can send them in for for free sharpening, just pay return postage. You just have to make sure you take good care of them-wash+wipe right away, no dishwasher, no leaving in the sink... the tips break off easily, we have broken a couple. Personally I like Global better but they tend to be a bit pricier. Have been on sale lately at W&S, Home Good and Marshall's lately though.
