That depends..do you like mold? Ever seen homemade sauerkraut, kimchi, pickles etc? If it's not kept below the liquid level whatever is above it will develop mold unless the jar is in a vacuum...if you don't have a fermentation cap to release pressure then whatever you are fermenting could build up enough pressure to explode especially since most people use the wide mouth mason jars which are glass.

Pickle Pipes

These seem to be a lot less trouble. Put one on top of the jar, and use the metal band to secure it. Any gases that occur in the jar, will be released through a small hole in the top of the Pickle Pipe.

The product gets good reviews.

How would these work for marinating meat? I was reading that if you marinate under a vacuum it will affectively open the pours of the meat and you can marinate super fast. Is that true at all? I was thinking jerky btw.
