I'm not familiar with Ryzen, can someone tell me how they compare to Intel? I'm not super tech savvy, but the rest of that build seems familiar and good to me. I'm hoping to get a PC for Elite Dangerous in VR.

This is a 8 Core 16 Thread processor and gaming wise, it would be like a core i5-8400. But for productivity and CPU intensive, multi-threaded tasks like Video Editing, Encoding, Content creation , Photoshop, they are 60% more powerful than i7-7700K andeven better than latest i7-8700k 6 Core.
Also, this processor is a unlocked one, so, you can overclock it to improve the performance and mainly gaming performance.

I got the Acer Predator Costco deal a few weeks ago and am debating on returning and getting this instead. I know the Predator has 32 gigs of ram but worry about built quality (Acer vs Asus) and also this has a much better processor than the Predator (i7-7700). Suggestions?

Ryzen 1700 isn't "much better" compared to the i7-7700. The AMD is better for multi-core work (video editing, audio editing, etc) but the Intel outperforms it in gaming and other applications that don't utilize all 8 cores. Also, Costco has a better return policy. It just depends on what you're trying to do.

Yes. Will want to get more RAM but 1070 and Ryzen 7 have more than enough power to handle new games.
