Can these be sharpened with a regular grinding sharpener like this [amazon.com]? (The one I have has a slot for serrated blades but I'm more concerned about the coating.)

Bought these from amazon almost 3 years ago I think solid knifes use the green one daily it's been keeping me from a victronix.

Yes you can sharpen It. I sharpen it monthly with a basic knife sharper..

I'm also curious about this. I have this set, and the coating has chipped away in places near the blade-edge from normal use (never sharpened). I don't know what the coating is made of, but I've likely eaten some of it...yikes.

Initially, I thought they were ceramic. Looking it up, they are indeed steel. You should be able to sharpen them with no issues. I'm not sure how the color coating will stand up to the sharpening though, if you're concerned about that aspect.

Yeah, I know they're not ceramic and that I can sharpen the stainless steel but I'm not sure if the coating will gum up my sharpener, start peeling, or what.

I couldn't find any clear answers in the reviews online. I would contact the manufacturer to get a definitive answer if I were you.
