Jars are not ideal as you would do better with something that doesn't allow light in.

With that said, I always start from seeds. Not only for the cost savings, but just the joy of seeing a big beautiful crop that you know you started from seed.

Did you drill through the Mason jars to give some draining when you spray water to the plant's soil? Or are you talking about growing herbs directly in water?
