I doubt aluminum has anything to do here. Most of the cans, like canned food, canned beer, coke can and not to forget the aluminum foil... these are all made from aluminum. There havent been any scientific corelation between aluminum and health side effects documented. Aluminum is safe.

Was really about to pull the trigger. Thanks for the warning. What material do you recommend for pressure cookers? I was looking at some of the insta-pots. Are those built out of safe materials?

Just Google aluminum cookware hazards. Best bet is stainless and no coatings.

Now if the cheap stainless from China is free from toxic impurities remains to be seen.

The Instant Pot inner cooking pot is high grade stainless steel. They also make a non-stick ceramic coated inner pot. If you were just using it for canning you'd probably be fine with aluminum, but you wouldn't want to do a tomato sauce or anything acidic in it.
