You place it in the bottom of the pan to keep the meat elevated. However they also work really well in the bottom of the small Akorn Jr kamado grill to keep the charcoal from falling through the cheap grid it comes with.

I've used it for cooking a whole chicken in Dutch oven and also as a meat press for burgers just put this on meat and put another cast iron skillet on top and it worked perfectly for it

I know about the pad! I do that vs burning my top but if it's under meat, is iT also, surrounded by water/etc.,.. it'll rust right, soon?????

No, it will not, as long as you season it properly prior to using and clean immediately after using.
