Can I add SSD to it? How is the performance of the U range processors in 8th gen? Is Inspiron too old a model?

Yes. Pretty good [cpubenchmark.net]. It's not. I posted recently on the Inspiron Costco thread as I've worked on the 15.6" variant of this if you want more information, but generally you remove the back panel and can add a SATA or M.2 SSD (as well as more RAM, an optical caddy, etc.) - performance is pretty solid and equivalent to a Ryzen 5 2500U.

It has a M.2 slot from the manual here. [dell.com]You have to pull off the bottom, carefully of course. The 8th gen U is pretty much as powerful as the HQ last gens. It's a 4/8 core/thread processor and can hold up very well.
