Almost all other instant-read thermometers on the market are crap, super slow to read and give inaccurate readings. If you can't pony up $60, check out the next best thermometer by the same company, it's called a Thermopop... If your not in a rush to buy, add a deal alert, they can be had for around $25 or so on sale.

For those who are curious as to why this thermometer is much more expensive than the cheap ones on Amazon, I discuss that here briefly (see the Wirecutter article for more details). Basically they use thermocouples and probably some better innards to achieve faster and more accurate readings.

I have one of these. Just bought a second one for a wedding gift. This thermometer is amazing! Really quick and accurate. You won't regret buying one.

I'm thinking of getting one but want to know... say I'm taking the temperature of water. If it heats or cools does the thermometer update or does it just take a 'final' temperature?

"Updates". It changes as the temps change instantly.

It constantly reads the temperature. You could stick it in water and heat it up in a pan and watch the temperature rise. Or you can stick the thermometer under the faucet and turn it from hot to cold and back and watch the temp change around.

Good price for the Thermapen. I paid about $20 for the the highly rated Superfast model RT600C and absolutely love it. It's rated for 5 seconds read time, but usually reads accurately within a couple of seconds.

Any reason to spend another $60 for one of these, which are rated for 2-3 seconds read time?

I love mine, but it stopped working after three years. It is costing me $30 to fix. I also have their ThermoPop, Chef Alarm and Smoke thermometers. I do a lot of cooking and they really work well.
