Pretty good value. The build quality is not bad but the screen can be better. However i'd rather they get rid of the geforce mx 150, just use the igpu and make this less than $500.
The mx 150 is next to useless for gaming anyway

Yes it can run Fortnite on low/medium settings. For a general idea of the performance of low end gpu's and Fortnite here is an acticle, note intel graphics are running a 720p not 1080p.

Does it pay to wait for the gaming Acer to go back on sale versus this one?

If it's mainly for gaming, the Nitro with 1050 Ti would definitely be much better. But if processing is more important to you 8th gen i5 is much better than the 7th gen i5.

How difficult is it to perform a clean install of Windows 10 Home on this machine? Based on the review that was linked above, there is a lot of bloatware that can/should be removed or just go for a clean install.

Any good resources online for how to do this? Is it machine specific or will any old tutorial do?

I want to stream videos, play Steam and vintage games (C&C Red Alert, etc) but don't have any plans to play any of the online modern games that you youngsters play these days. I'm not sure if processing or video is more important ,honestly.

Windows 10 has made it super easy by adding a factory reset option. Do that and all bloatware will be gone, just like a clean install!

That's how I described my wife to the judge at my divorce proceedings.
