seems like a great price but wonder if the HP S700 is a better deal at just $7 more

under or just around 100, definitely not anything above 120, unless you are in a major hurry.
QLC is here, and SSD technology made a lot progress in software and control chips, price will nose dive within the coming year or so. I also heard China is heavily investing in chip fab, soon the Korean monopoly game is over.

I agree, stay away from silicon power. I lost my data from their cheap ssda couple years back and I'm not going back to them.

Given the fact that 500GB is $100 for a decent brand, does it make sense to jump on the $55 from HP since the $500 GB is essentially double the cost? Thanks

As long as you can fit in 256GB, I'd say do not waste money on larger ones.
Diligent file management and good habit of garbage purge is way more important than just add another 250GB space.
