Not judging anyone for getting these, I'm just genuinely curious. What do these headphones do that justifies the price?

They probably use real emeralds in the limited edition paint.

It's a niche hobby. Same as any other special interest once you get into better and better equipment it starts to get expensive and rather quickly. The difference between a $300 headphone and $1000 headphone is minimal to the average person.

With that said, specifically for headphones you're usually getting better sound quality. If you're actually looking at these though, I would recommend the massdrop Fostex THX00 for a fraction of the price. For $900 you can get some serious headphones, and the Fostex TH900 wouldn't be on my short list.

What does an iPhone X do that justifies the price? Same concept
The iPhone X does many things to justify its price. Poor example, but I see what you were going for.

Beats.

Just kidding. Usually people will recommend something from sennheiser, ultrasone, or audio technica. There are certainly winners from each of those brands, and there are many others that have great headphones.

Audio equipment has huge diminishing returns. 150-200 can get you some pretty good headphones. 300 or less really is plenty to get some incredible sounding headphones
