I own a few non-elite harvests. They're really good. From what I understand, all of the 'elite' models are built in metal instead of plastic. That means they're more durable, but its not like I mishandle mine or drop it. From a practical standpoint, its about the same. Some people use aerogardens as displays too, so perhaps the elite model wins points for that. But if you're only concerned about growing herbs and whatnot, you don't need elite.

Can you grow, like, anything in these? Asking for a friend.

Looks like a great deal. Does anyone know if it's worth upgrading to Elite version?

Shape mainly, both hold 6 pods. The first is arranged in a : - - : formation, whereas the 360 I believe is 5 pods surround 1 pod

Less than $2 per month. 20watts x 17 hrs/day x 30 days = ~10kwh/month x your cost per kwh (probably around $0.11)

Seen a lot of bad reviews for the 2016 version. The 2019 version was on sale on Amazon for about the same price. Can people who have one say which version they have and how well it works?

Also, can you plant seeds yourself or do you need to buy "pods" to get anything?

You can plant any seeds you want. You can get extra pods, cages, and caps from Amazon. They also make (for some models) a Styrofoam insert that you can use for seedlings to move to your garden. Those can hold a few dozen seedlings, but you need to move them out before they get too big, I have mine growing tomatoes and cucumbers in the winter, and then in the spring I use it to start all my outside garden plants.
