I haven't had a problem with any USB Type C power supply that was rated for at least 45 watts, but the dock is a different story. If anything carries the risk of bricking your switch, it would be a sketchy dock. But electricity is just electricity, Nintendo can't make a "special blend of volts and amps" that the switch can't live without.

I've charged my Switch with multiple AC adapters from Apple, Dell, Anker, and Google/Pixel interchangeably, with no issues. I wouldn't trust any no-name knockoffs for aliexpress or something like that. But yeah, any regular USB-C adapter from a reputable manufacturer should work. That's the whole point of using USB, to make it universal. (USB = Universal Serial Bus.)
