This IS a good solid choice, but you can get a mercer genesis (similar to the Wusthof GP2) or the Mercer Renaissance for less than half that price.
And both of those are used by tens of thousands of working cooks

How should you be sharpening this? At home with one of those knife sharpeners or do I need to send it back in?

Either you did it wrong or the knicks were already there from cutting hard stuff like bone.

Good knife. I've used it before. But I've switched to Japanese style chef knives. The harder steel, the sharper edge angle, the style, the weight is better for me. It seems like many feel the same after they've tried. Maybe I'm biased, but that seems to be the pattern I've seen from most.

I've still got a set of Genesis knives which is very similar to this Wusthof with the same steel and much cheaper. They are 95% of this knife and I use as work horse knife.

Do yourself a favor and pick up a gyuto or santoku style well reviewed Japanese knife
