I'm not sure what you're trying to communicate. But what I read was: "Dell canceled my order, so the Windows OS must suck and I am sticking to Mac OS."

Which leads me to wonder, why did you try to switch to begin with?
Why are you tying hardware customer service to software utility?
If they cancelled your order without reason, then how did you know to ask if they had canceled your order?
If the XPS is a good product, then why does their customer service matter?
Why are you tying XPS production lines to Vostro?

Legitimately, what you wrote would make more sense if you meant apple the fruit and not Apple the company, but you capitalized the proper noun.

Yes, it is better option. Just one thing you should keep in mind that like all the budget laptops, this one does not come with a super wide color gamut display. This is a mediocre display at best and should not be used for any professional photo and video editing work.
But one good part is that is that the Type C Port supports Alt Display Port which means 4K @ 60 Hz output.

Yes, it does. One with HDMI and one with Type-C Display Port alt mode. The HDMI version is probably 1.4a and you will get 4K @ 30 Hz at max. The Type-C Port , on the other hand, can support 4K @ 60 Hz. You need to buy a Type-C to HDMI 2.0 or Type-C to DisplayPort 1.2 cable for this. Also, any Type-C dock with HDMi/DP will work as well.

If there's a config with touchscreen for a little more, I'd be all over this.

Anyone know how the build quality compares against an Inspiron 5000/7000 series?

For frame of reference, I am still rocking a Latitude e6430u 14" 1600x900, i7-3rd gen, 8GB ram, SSD whenever I need to do some work at a coffee shop or travel.

The Build Quality is way better than 5000 series and most of the 7000 series, apart from the Business model. Rather than looking slick and shiny based on single piece of mettal uni body design, this one is more sturdy. The body is made of 3 piece metal chassis (Top & bottom cover, as well as the palm rest).

Well I would not be using either for gaming...so this is probably a better choice then?

Brightness and color accuracy is pretty poor on this model. I ordered when it was $549 then cancelled after reading a few reviews on the display quality.
