Was going to pull the trigger but then I saw the reviews. 4 out of the 7 most recent reviews says it got burnt way lower temperate than it advertised. One said it started smoking at 350 and a few said 400.

I've had them for a couple months and have had no issues. Hottest I've used them is 380F on convection. They look like new after rinsing.

When I sorted them "Most Recent" first, there were just two reviews in the last 100 complaining about low temperature performance issues ... although one of them was a doozy (mat caught on fire).

The most common complaint was staining.

I've got a half-dozen Silpats.

Each has been stained to some degree or another. I've scrubbed and soaked them to no good end. I've had to learn to live with that issue. Cool

No taste or other discrepancies result from the staining. The discoloration doesn't seem to affect their performance. So, my answer is, "No, I don't worry about the stains."

I've used it at 425 and it's fine, no melting. Yes it'll get some stains depending on what you're cooking, but it purely a cosmetic complaint.
