I read that Windows 10S limits users to install only apps from the App Store, so there will be limited choices for software unless MS change this.

Microcenter vivobook all the way. Same exact PC but with 1080p and Intel vs amd.

Swapping out of S mode to regular Win10 Home is supported, free, and is easy to do.

It's not workable - even the worthless X230 I have to keep around for some system-tied software licensing is nearly unusable due to the minimum window height in many apps being as tall as the entire vertical resolution. I have the Windows taskbar on the left side of the screen and can barely see the top of OK/Cancel/Apply buttons to click (usually just use keyboard to interact with them).

1280x800 would be workable. 768p hasn't been usable since 1024x768 was a thing - maybe Windows XP?
