Word of caution, while this is a great knife, notice that there is a bolster that comes all the way down to the sharpened edge and is quite large. This makes it very difficult to sharpen correctly at home. As time goes by, with home sharpening, the blade part will no longer have maximum contact with the cutting surface due to the bolster that typically doesn't get "sharpened". That can be corrected by having the knife professionally sharpened, either by being sent directly to Wusthof or a professional sharpener with an actual grinding wheel and having the bolster wore down. Still a good knife, but something I wish I had known before buying one.

I agree with this. Great knife, but the bolster does get in the way of a whetstone for sharpening. The bolster does give great hand feel IMO though.

I find the 8" chef staying in the drawer more often since I picked up the 6" chef. Can pick it up on Amazon right now for $100 with a paring knife that runs about $40 if purchased separately

Yea they have updated this in the ikon line. However those are a bit more expensive and don't go on sale as often

Anyone have problems with the handles cracking? We have ~6 classics and at least 3 of them have broken plastic handles after 8 years of use. I'll admit they do get put in the dishwasher from time-to-time, but I wouldn't think that would break the handles (only dull the edges). I was thinking about contacting Wusthof, but haven't got around to it yet.

Several of my wusthofs have cracked plastic handles. Only one (a santoku) has ever had a piece fall off. I haven't contacted the company either, but have been meaning to.

Also, although my knives get a lot of use, they NEVER go in the dishwasher.
