High carbon steel is going to rust if left moist. There is no trade off you either get good high carbon steel knives that are sharp and stay sharp or you buy junk that doesn't rust.

I have a set like this but fewer pieces, Chicago Cutlery. I bought it 20 years ago and it's still good as new.

The block is a little worn.

I have used the insignia knife set for a few years. The built in sharpener works fine and I really like the one piece construction.

Some of the steak knives have gotten chips in the blade from regular use and they seem predisposed to getting rust spots if left in water for any period of time. I don't baby them at all though, so I'd still recommend them.

I have been reading a lot of reviews regarding rusting and blades being chipped. Not sure if it's worth the risk. I rather pay more than get rusty knives.

Most people that get rust and chips put their knives in the dishwasher.

I've had the Chicago set for five years now and they're still going strong. I've never used the built in sharpener, but I've also never really felt the need. In five years I've only used my sharpener a couple times. These have great edge retention and the build quality is excellent. Highly recommend.
