seems like a decent deal for a full Klipsch theater speaker setup.
I assume the bookshelf speakers could be used as rear channels, anyone know what of a good receiver to drive these with?

These are very efficient speakers so pretty much any decent one will do. I would just go by the features you need and find the least expensive one if you have no brand preference.

Will I benefit from getting the R-625FA Floor Standing Speakers over the R-610F Floor Standing Speakers in a small place (10 x 12 ft.)?, Don´t know much about sound, so thank you for any advice.

It really is 1 main driver vs 2 main drivers....
I would say, if you're planning on getting a subwoofer as well, there might be a case where your subwoofer can overpower the main speakers, it's easily fixed by just lowering your subwoofer level... but if you don't want your low frequencies to be "limited" to the output you can get from the single drivers, or if you're planning on a dual subwoofer setup, yeah, you should go for the two driver towers.

For retrospect, I bought this at $650 when it was considered a deal just only three months ago. Too bad it's too late for me to claim any price protections. At least I've used it plenty since then.

The R-625FA are Dolby Atmos speakers as well meaning that is actually a 7.1 setup.

Oh, I didn't know they were Atmos!
But that would make it a 5.x.2 setup, with x the number of subwoofers, and 2, the Atmos speakers.

Remember, this is NOT including any subwoofer at all, you would need to get it separately.

So on Ponko9's point I would add that the 625FA do have a enabled module(Atmos)speaker that would be adding two more channels to your receiver. Klipsch does make that model without the module(625) that would be less expensive.
IMO In a room that size and depending on your seating most likely the reflection points for those modules won't be ideal.
This is all subjective so it would be up to you whether it's worth the extra cost.

I would point out that in a layout(room) that size dual subs would most likely not be a good idea, one good sub should suffice IMO.
