Wanted to ask the community here, I'm looking to use a light weight tv, back mounted with magnet, to use as a display for PowerPoint and whatever else out in the field. Like mount it to the side of a car and run the power to an inverter. Using a Microsoft display dongle or hdmi display thingymajiger to connect iPhone or android phone. Would it this a simple/realistic diy set up?

There are many ways to do that via Android. One option is using a Chromecast. Not sure how Chromecast performs if there is no WiFi. There are Android apps allows you to control it via your phone. Unified Remote is one of them. I can't remember exactly what the other is called, but the name has "mouse" in it.
