2.5" bays always SATA III. The M.2 Slot can have either SATA III or PCIe NVMe SSD with M.2 form factor.

Excluding any special hardware or software, the Intel UHD 620 graphics is what will determine max # displays that a unit can drive. (Btw, MS Win 10 can support 10+.) This laptop should be fine for three; check out this link for possible combinations to achieve three displays.

Access & replacement for either look straight-forward, except you may (or not) need a bracket plus cable for the 2.5" drive. As an aside, you may want to pick up a stiff guitar pick to aid prying open the case (at the top-bottom seam) without scratching or breaking it.
