I am too traditional and will stick with Wusthof Classic or Ikon knives for fine German knives ... Handle and blade preference...

For what it's worth, they ditched the lifetime warranty - something that Cutco still offers. Shun still offers lifetime sharpening, but they won't fix any other issues.

i tried some of the Wusthof and henckles i just couldnt get the right feel for them in my hand, however when i tried shuns i did like the lightness and holy hell sharpness lol.. i just dont like the prices.. 120-150 per knife. ugh.

i just hate how if you have company over and they arent fimilar with higher end knives they chip your shuns.. someone decided to use my chef knife to try and chop thorugh pork bones.. which it did... but also chipped my blade... where the others like the wussthof/henckles can sustain abuse and not damage the blade as easy..

hide your Shun set from them when they are over. Get a cheaper set for those occasions.

You know I try from time to time, but then I end up needing my knives for certain things and pull them out.. thats when they get used by others lol..

Yes, you can't go wrong with Classic or Premier (I own single knives from both) you will be happy with either. It all depends on what you like as well though. Do you like just the layered look? Do you prefer the stamped look? Do you like more of a straight handle or a handle that has a little more grip to it?

They still will fix tiny chips as per their website. I am not sure about their definition of "tiny" but I just received my knife with a tiny (2mm or 3mm in length) chip fixed back from their U.S. company (Kai). I paid $5 for the service.

It is not like they aren't drinking $200 of my alcohol and we just spent $300 on Turkey dinner. I am still waiting for the family to roll up the sleaves and get dirty instead of eating and drinking all the goodies and then falling asleep on my furniture.

I guess the good thing is at least they go home or find a hotel room instead of camping out overnight Applause

their lifetime sharpening is nothing special, something you can do better yourself with a decent sharpening machine, and much better if you have a set of stones.

Shun Classic is one of their better products (i have a few). the wooden handle feels very nice compared to their cheaper lines.
