With only 256GB, how many "modern" games can you install on it? What do you do if you need more space? Upgrade the SSD (don't want to spend the money/time)? Use a removable storage drive (don't want to have to tether a drive to the system)? Is there something I'm missing?

Not really, due to the power limit applied to the 2060 in the mobile platform. The previous gen didn't have this issue with power limit because it didn't have to feed the tensor cores for ray tracing.
I have the previous version with an 8750h and 1060 6gb. Throttling happens at stock voltages on the CPU...the gpu is surprisingly not that hot. Undervolting the gpu and CPU dropped temps when running at full load to around 80 max. The cooling is suprisingly acceptable in my opponion.

For whatever reason the CPU wants to default to a high clock rate even at lower utilization. Enabling speed step in throttle stop fixes that and makes things run cooler while gaming

There should be 2 drive bays. The m.2 and a normal sata. I replaced the HDD that came in mine with a cheap 512gb SSD. Took about 5 minutes and cost 27 bucks.

Agreed. I own one and the hinges are questionable. Build could be much better, but at this price I wouldn't worry too much about it. Also Hp offers accidental protection plans that are not that expensive.

As do I. I use throttlestop to undervolt, but CPU still spikes to 90C at times.
