This is an older camera. Image quality is good but there's no image stabilization. the replacements all have that feature

No in-body stabilization, but stabilization is built into the lenses.

It's a software hack, not a firmware update. But yes it does bypass the limit. I've never done it myself however.

There is no clear successor. I think the G85 and then the G95 were intended to replace the G7, but those are a fair bit larger and heavier than the G7. The GX9 is nice and compact, but it doesn't have a nice big grip like the G7 does.
