You're pretty standard size for someone 6', the problem with going with a medium is that the sleeves likely will be too short for you.

Typical layering for outdoor use would be: base, mid, and outer shell. On a regular day out, you could do a t-shirt, this jacket and then keep a rain or some other light outer shell as a backup.

Or conversely, you could use this jacket as the outer layer; then do a t-shirt and flannel or fleece underneath.

I have a lot of Colombia gear; this looks like it is a 40-50* jacket by itself. Of course, layering will get you by for colder temps.

i don't know how to layer. i'm 6' 180lbs, i usually wear a medium in shirts. would you layer underneath this? if so, what would you wear? should i go for a large if this will be going over other layers?

The hybrid jackets are generally okay for 40 or even 50+ temps. I would avoid this kind of jackets for any serious winter. As its hybrid it won't even give good protection from wind. For layering you can buy "base layers", which are really thin shirt like but do a pretty good job.
