Will the apps stop working or is it bluetooth connection to the phone? Will the cars be like nothing but fancy hotwheels once the company is belly up?

The cars rely on a bluetooth connection which is established from the Anki Overdrive app. I would say you have nothing to worry about atleast not for a few years. The app works perfectly on android 8, 9 and the latest android 10. Not sure about iPhone support.
