Not a good deal. You posted a more expensive Amazon link. You can get a single one for $23.93 here [amazon.com].
Personally, I'd much prefer to spend $5 more and get a single 256.

Yes, you're right, you're very unlikely to have two simultaneous failures. However, you're twice as likely to have a single failure due to having multiple drives. Your analogy is bad because these cards are not mirrored, unlike a RAID1 array. Anyway, failures are rare. You're more likely to lose a card when you're being a mule and swapping them out. If you only have one it's staying in your camera.
Anyway, if you're concerned with data loss, the best you can do is back it up. Having two cards is tedious and poorly mitigates risk.
