It's a fine alternative to the official dock. It only has one USB port, which for most people is still more than they need.

This seems like a really good deal considering it includes an AC adapter and HDMI cable. The reviews on it from Best Buy are positive also, but a lot of people mention non original docks bricking the Switch. Is this an actual concern I should watch out for?

Yes. Their docks also bricked Switches back when this issue cropped up after an update. Problem is, Nintendo uses a proprietary USB C quick charge 'algorithm' (the correct term escapes me right now) as opposed to the official USB C QC format.
To each their own though.

Such mixed feelings about wether this can brick switches, with obviously no official word from Nintendo. I want to buy this really bad but it just sketches me out, those one star reviews are a nightmare.

Also would like to pick up one, great deal but can't risk the bricking. Can anyone confirm 100% that this is safe now? I've heard the bricking was a previous software issue.

I bought a refurbished unit and it's worked for me with only one weird caveat; with a brand new, out the box switch, I had to first use the official switch before the insignia dock worked.
Other than that I don't really have much negative or positive thoughts. It works for me as a bed room dock.

Dang, I guess the small convenience of not having to move my dock to a different location doesn't really outweigh the risk of bricking my system, even if it's not very likely to happen. Thanks for the info
