So I want to set up an AI Mesh in my home. I have an old Asus AC Router that is compatible. Should I get this, or wait for BF and get the Wifi 6 router for 250 from Newegg? Am I going to see any noticeable difference moving to Wifi 6, or is this monster going to be close in speeds?

Wifi 6 currently does not matter, even wifi 6 equipped devices are showing barley any improvement. Unless you really want to future proof with alpha/beta routers of wifi 6 I would keep waiting till wave 2 and everything is standardized.

I have owned the AC5300 for over a year now and its one of the best routers period. This would make a great center point for AI mesh.

Have not used the Pro but supposedly some of its features do really help with bloat and gaming when doing a lot of FPS. How big of a difference is questionable from reviews. I have used the AC5300 for over a year and I game and have had no problems with it. Its a great router, powerful, and huge range for coverage.

I have been using my crappy modem/router from my ISP for the past 15 years. I am asking ot savvy with this stuff at all. I understand what I say next will be a big upgrade on it's own, but I would like to know if I purchase this strong router if it will be hindered by this modem Netgear CM500 (16X4) Docsis 3.0 Cable Modem

Depends on what/how you want to use it. For Mesh/Bridge setups you should have faster throughput across devices for high speed internet. Of course you're not going to get Wifi 6 speeds on your specific device (ie: phone) until they add Wifi6 support. So for Mesh setups with high-speed internet (ie: gigabit) it will make a difference.

I'm in this situation but no way in hell am I paying $700 for a Wifi6 mesh setup. I will wait for the prices to come down to a reasonable level. Recently I bought a refurb Asus AC86U. Nice router, only paid $100.

My opinionated opinion is just get 1 unifi AP and an r7000, turn off the shitty WiFi on the router, hook up the AP and see what wifi was meant to be. Costs close to this router here and the AP doesn't look like something that will crawl up ur anus at night and lay eggs.
