There is no point in owning a fancy knife if it isn't sharp. Free sharpening? Sending in a knife once a year for free sharpening is a pain. Knives sharpened once a year still don't perform as well as a cheap knife that is touched up regularly and fully sharpened yearly. The honing rod can only carry you so far.
No matter what sharpening method you use, you will screw it up at first. I did. That's how we learn. I feel bad about the $8 knife I ruined but I'm glad I didn't ruin a >$100 knife. Practice on cheap knives first.
I write all this because I really wanted a super sharp super nice knife in my kitchen. After obsessively reading online from knife forums, I slowly came to the realization that sharpness was far more important than "knife quality". I want to save you the time so you don't make the same mistake.
