For Noice cancellation at $40 vs $200+ get this. It includes a hard case and does the job good, especially for the price.

Takeaways:
sound quality is 100% subjective
This is a great deal
Fit and comfort are more a concern

I don't have the higher Sony's but i do have the 700h model. For the family I also bought a variety of alternative cheaper NC headphones for a recent trip with a 10 hour flight. I'm the audiophile and tech in the house. This and the boltunes were nearly identical in all respects. Box art were off a bit. I also bought the Anker Soundcore Life Q20. I really didn't find any good reason to spend the extra money. I tested them at home and all performed the well.

Remember these are Chinese off brands. They're great for what they are, which is disposable. You might get 5 years, you might get 6 months. If you pay extra, you're getting better warranty (except Bose). I've read the headaches for warranty support and will NEVER buy Bose.

I just bought a pair of Sony WH-1000XM3 headphones via Amazon Warehouse deal on Black Friday In used-like new condition.

Those are amazing headphones and definitely have a premium feel (construction, design. Features, app support, etc.) and sound to them. However, I am sending them back because I already have the Taotronics TT-BH060 headphones.

While the Sony headphones definitely outclass the Taotronics set, I can't personally justify the price differential ($40+ vs $200+) for the difference in sound quality. (I am by no means an audiophile, and while both headphones sound decent to my ears, I feel as though the bass comes through better on the Sony headphones. but again, this is not worth the $160+ price difference to me.)

How do these compare to something like, Sony's CH-510, in terms of sound and build quality?

I cant speak for the Sony's but I have this set and it has a good feel to it. My ears dont get as warm when compared to other headphones. The bass is decent as well and it noise isolates very well.

If anyone has these and more premium headphones. How do these compare to premium noise canceling headphones like Bose 700 and Sony mx1003?

I'm in the same boat, but also with Soundcore NC which is currently limited time deal on Amazon at $55 (though I'm less concerned with touch controls and more with sound and noise cancelation).

I have these and they are great for the price in my opinion. Using them as we speak during my workout.
I would buy them again in a heartbeat.

I don't have this, which is most likely better than the old tt-bh047 I have, but I also recently bought sony WH-H900N. They both have their own strength/weaknesses, but here's how they stack in my experience:

1. Build/design: Sony
2. Fit/Comfort: Slight edge to sony because it fits a little better and looks nice on the head
3. Battery life: haven't had sony enough to test this but tt might beat sony here. my tt go for 2-3 weeks with a single charge, 1-2 hrs of daily use
4. Features: sony obviously
5. Passive noise canceling: tt
6. Active noise canceling: tie; sony is probably better but better passive canceling of tt helps it
7. Sound quality over BT: sony sounds clearer, overall well balanced sound compared to tt
8. Sound quality wired: same as 7
8. Mic/call quality: both seem to do fine job

What I don't like about my tt: too much "air-space" between head and curve of the headphone - i think it could look/fit better but the op's headphone has hinge design similar to sony so this may not be an issue. second thing I don't like about my tt is ANC seems to lower the volume by a tad bit, or maybe it's just me. ANC seems to create a gentle vacuum effect inside the earcups so not a big fan of that. i normally use my tt headphones with ANC off since passive canceling is good enough to keep most of noise out.

What I don't like about sony: poor passive noise canceling and too much wind noise. the wind noise is because sony needs to "hear" things through the microphone for its ANC to work. so, to me, the ANC is useless outdoors even when there's a gentle breeze. the ANC has a wind noise canceling mode which does a great job of canceling wind noise but it takes away some of the ANC. Even with ANC sony tends to struggle keeping out metro noise because of poor passive cancellation.

I got the sony just few days ago and while I like the sound quality, fit/comfort, and features it offers, I don't like having to pick between wind noise or better ANC, and switching ANC mode every time I step outside isn't convenient. I might buy the op's or soundsurge 46 to see if they sound better than my bh047 and get rid of the sony because I use headphones mainly for commute and the sony model I bought doesn't seem ideal for that.

Hope this helps you
