That's what I'm trying to figure out, does bread come out differently baked in a cast iron?

More even heat and bread won't stick (easy to clean) when season finish is maintained properly. Also, keeps loaves warm for a long time if you want to serve these directly out of the pan (on the dinner table for example).

it lasts forever, doesn't scratch, even cooking, best of all - it's made from the same materials found in our blood compared to the chemical coated pans..

Cast iron wins every time. Know that it takes more work to care for though (Rust, seasoning, etc). I love using cast iron but I don't use it daily. In this case of making a loaf of bread cast iron is great for this.

N41 x2 thru Frugal for in-store wally pickup.

DW won't use non-stick so she uses glass for loaves which has to be soaked. Hopefully she'll be okay with CI loaf pans and they'll be a heck of a lot easier to clean. Our 12" CI skillet stays on the range 24/7 Smilie

Wouldn't you want to take out the bread after baking because of the heat retention? Like it would keep cooking the bread or burn it at the points of contact
