I prefer the Special Dark too. It is Dutch processed(partly), I believe. There are some pretty good prices for it too, if you search. Probably worth it because it may be harder to find in stores.

The $6.18 list price is misleading. Amazon average for this size is $9.25. Other major stores (eg Target) has it for $3 per 8oz. This is 3x that size, you get the idea Smilie

The way I interpret this label is that the cocoa powder is produced using just cacao – it's not saying this is 100% raw cacao. Similar to how Ocean Spray 100% Juice Cranberry consists of 100% fruit juices (rounded up, since there's a bit of ascorbic acid or w/e) but isn't 100% cranberries. Or something like that idk, it's all a bunch of marketing wizardry
