Top athletes utilise quick and easy sources of glucose like this mid training session for example. And insulin response can be manipulated in humans whereas the effect of cholesterol on arteries for example, not so much. For non diabetics, excessive cholesterol is likely far more of a concern than sugar (heart disease is the #1 killer of Americans). Sugar may play a role in heart health but it doesn't cause the majority of health problems in any country.
