Great knives. Just make sure to oil them before putting them away. Pretty easy, just a drop

From the reviews, I'm not sure which to believe: some folks say the blade is hard to sharpen or won't hold an edge long, while others say the complete opposite. The only consensus is the carbon steel will rust/patina easily. Any thoughts?

It's a basic carbon steel knife that will be easy to sharpen, and should hold an edge a decent amount of time, but not forever. Knives like this usually aren't hardened to hold an edge forever, but rather left a little bit soft so they are tough and durable. Carbon steel will rust if you don't keep it clean and oiled, and lots of folks use vinegar or mustard to force a protective patina on a carbon steel knife to help stop it from rusting. Such a patina can look quite attractive.

It's an $11 knife on sale for $7. If you like the style then don't think too hard, but understand that carbon steel knives take more maintenance than stainless steel so they are not for everyone.
