Thanks for sharing. I was a bit confused about what phone a "Samsung Galaxy 5" HD" is, but did see that it's a Samsung Galaxy J2, which is a budget phone that was released in 2018. (Apparently, there's a 2015 version, but the one sold here is the newer version.)

can any of these hsn phone deals be used for Mint Mobile/Freedompop (t-mobile/att)?
ie: not care about the 1500 Minutes/Texts/Data

How long do the minutes last? Are they monthly only? Or could we use them as long as we have minutes left?

The service is for a year. As long as you have service and minutes you're good. You buy more of whatever you need when you need it.

Highly recommend going to the Tracfone web site and reading FAQ so you know how Tracfone works & don't buy something that isn't what you want.

Unlocking won't help for a lot of the TF bundles, the cheapest phones are usually Verizon only. Check to see if the phone has the necessary bands for GSM before assuming it will work. Since this is a 2018 entry level phone it might not be worth unlocking in another year.

I bought 3 of these. Just needed the service time for various lines. These are usable junk. They fall into the Fisher Price toy category. The Samsung J3 from 2016 had an amoled screen. A much better device. These are certainly usable devices and are on the Verizon network. Best device from Trac is the Moto G6 and one of the older generation iphones.
