I have the stainless steel mulit-clad from Cuisinart. Be aware that their stainless cookware have a serious quality control issue. Half of my pots and pans have pitting and oxidation on the cooking surfaces, and that's from just from sauteing vegetables, warming soup or simply making pasta. To their credit, Cuisinart so far has replaced 3 of them but I still have had to pay shipping.
Very solid set, Although I'm not a fan of the fact that they consider pan covers to be individual item's in the set.
One of the benefits of stainless steel is that it won't react to acidic foods, I think the real issue is that they've gotten some poor-quality stainless steel into their supply chain, so while some pots have a corrosion problems other do not. It's a crapshoot. Frankly, I were do this again I'd look into buying it from a different brand.

Doesn't the acids from the pasta eat up the stainless steel? Perhaps that is what's causing the discoloration.
