Wow thanks for the actual responses and not roasting me for my espresso ignorance. Still a lot to learn, just got a barista express and so far am terrible at using it.
barista express is easy. you tube it. just get the grind down, tamp (not too hard) and your good to go

For some reason unless we tamp super hard we don't get good pressure. And of course it gets worse with older beans but even fresh ones we have to give it an oddly hard tamp. Been doing research to see what's up

It does work, and works exceptionally well, especially when combined with vacuum packing.

https://www.home-barista.com/stor...eezer.html

It's a very long, very detailed article on a few very picky coffee people regarding the effects of freezing on the resulting cup. The tl;dr is best summed up by this line:

" In any case, this reverse anomaly shows that any distinction between fresh and frozen was minuscule."

The context was that some tasters found the frozen beans "better" (the anomaly) at a certain number of days after thawing. The takeaway is that the variability in a cup brewed using exact repeatability is, effectively, larger than any effect on beans frozen for an entire month.

I buy local and keep about a week's worth in a jar on the counter, vacuum freezing the rest for up to about 6-8 weeks. I never open the bag when it's cold (~12hr at room temp before opening it) and I use a (cheap) vacuum sealer to reseal before freezing. These beans, at about 1/2 my local cost, are tempting - but it would take me 2-3 months to go through 9 pounds!

How do you guys use this much coffee before it's no longer fresh? Or does it stay fresh if unopened?
We make 4 espressos a day, so 2.2lbs bag does not last more then 3 weeks. I vacuum seal 1/2the bag and leave the rest in a bag. I am not worried about coffee not being fresh.

Like it's earlier mentioned, Lavazza uses packaging techniques that factor in coffee freshness such as nitrogen flushing. This process, used by Lavazza, helps preserve coffee beans by flushing away the oxygen and so temporarily eliminates it going stale. Or should I say prolongs coffee freshness. Coffee aficionados recommend keep it in a cool, dry place. Oxygen and moisture are the enemies of coffee. Once water comes in contact with beans, it starts the oxidation process and extracts the flavor.

Some people use products like the airscape coffee bean canister. And they are claiming to be an excellent to keep around since it uses a one-way valve to push out oxygen and air-tight lid to keep out the elements. Those containers are designed specifically to aid in releasing carbon dioxide, minimize oxidation and keep you beans fresh for as long as possible.

Some people store them in the freezer, some in the refrigerator, and some just out on the counter. And some people have those fancy valve bags, while others go old school with paper.

So, what's the right way? The simple truth is that as long as you avoid the four of the coffee bean deadliest enemies (moisture, air, heat, and light), then you'll be alright.

yah if you're in a state with no sales tax on groceries, then it's probably an error with their programming. maybe their cs can help to correct it?
Thanks but their customer service is non-existant... chat window appears, has you fill it out, then tells you that they will get back to you.

There is zero attraction to doing business with a company that has no customer service and can not even do math correctly. I don't just mean that they stupidly charge sales tax when they shouldn't, but that their 20% off is not even 20%. Waste of time.
