Someone please tell me what Food Grade Diatomaceous Earth is used for. I'm assuming you don't actually eat this stuff, but for the life of me I can't imagine using it in any food related way.

Diatomaceous earth kills basically all bugs including bed bugs, roaches, ants, ticks, spiders, fleas, slugs, silverfish, beetles, centipedes, etc.
and its non toxic

DE is a source of silica, some people consume it claiming it helps their hair and nails along with various other claims of killing gut bacteria.

I dose a handful of DE on a sponge, mix it up and plug my home's seeping holes on the bottom to plug them preventing any bugs from getting in but keeping the moisture from the inside to freely leave. I. Addition, I sprinkle lavishly around the corners, nooks and cranies throughout my house as a preventive measure. I believe jt has helped with the bug population tremendously.

It also used in food mfg and storage.

I feel like I've read at some point you have to be careful with this stuff not to inhale it or something to that effect.

I know there are some old school aquarium filters that use this that apparently are unparalleled for polishing water.

Although they don't use food grade, some swimming pool filters use D.E. powder, mostly commercial pools.

I don't use Food Grade DE, but my pool uses a DE filter and it can't be topped for filtering out particles. It's got its own set of upkeep issues, but it makes for an amazing filter.
