Do you think I should try the Switch version of Pandemic game or go for the board game 1st, playing with the wife and kiddos.
The Switch version will help understand the rules of the game better. So you're less likely to misinterpret the rules since the digital version will prevent you from making illegal moves. I prefer the board game though., i think having the actual game pieces in hand adds to the excitement and fun. I bought the board game then later learned how to better play on the digital. The Switch version is cheaper and also comes with 2 DLC's which would cost significantly more for the board games even with a good sale. I'd say for an easier learning curve, go with Switch (at this price). However, I'd think you'd get a better overall experience with the actual board. FYI... there are some decent tutorials on the Tube from the makers and also from other players to better understand the rules and gameplay.

So which of these (if any) are good for pure solo play (not local multiplayer, 'cause no-one else in my house!)? I would love to learn the games, go through tutorials, and play against AI. Do any of these work well for that?

P.S. Kind-of want to get Pandemic just because, you know, Pandemic, but I've spent the last 6 months trying to NOT get Pandemic, if you know what I mean....
Have Carcassonne for Xbox Live (back from the earlier 360 days!) and the physical board game. Both are great to play and from what I can tell, this is a polished remake, not port. If it compares, the AI was soft to extremely challenging based on settings. I can't recommend Carcassonne enough for multi- or single player.

Better yet, just like the 360 version, clearly has an expansion or two built in as the "River" gameplay upgrade is in the screenshots.

Catan is super fun. I only play it solo. There are several different challenge modes with each having three different difficulties. I would highly recommend. I should mention, that I bought the expansion of Seafarers and Cities as well.

I downloaded Pandemic via Xbox GamePass and it just felt like a rip off of "Life: 2020 Edition".

Some of us are. The rest are playing Plague Inc. and purposely running around maskless to spread it and win(?) their game.

I have Pandemic on my iPad, but IMHO, it doesn't work well as a solo game (like on the Switch). The reason it works well as a board game is that you have people playing that all have different ways of thinking. It is hard to beat the AI, when you're just one.

Personally, I'll stick to playing in person with my friends; I think for this game, that is the way to go.

Yes, but it supposed to be a co-op 'game' instead of this battle royale/competitive/free-for-all some people have made it. If people would stop doing friendly-fire and sabotaging, we might actually come out victorious sooner than later.

I wish Pandemic offered online multiplayer. I dont have anyone to play locally.
