I would sand lightly just enough to rough up the surface. That way the adhesive has a better chance of sticking to the wall better. Just remember to wipe down with a moist wet towel and a bit of isopropyl alcohol.

Please just use real materials in a kitchen. If it takes longer to save for it, then save for it. We looked at these for my parents' kitchen and in-laws' kitchen, and it was easy to see and feel the difference. My folks opted for a couple rows of subway tile, a half sheet of these, and two more rows of tile on top. My in-laws opted for the entire backsplash with this mosaic style.

If the white 4x4 tiles on the wall are in good shape you may be able to update with just a grout change. White tiles with grey grout are in. Bit of scraping involved though.

Countertops...... granite, quartz, etc will catch buyers' eyes, but pricey. The big box stores have nice formica that looks like granite. Works best for straight runs and Ls More complicated joints are harder to pull off.

Discerning buyers will notice cheaper finishes.

Thanks-I regret not having done dark grout. It is epoxy grout, so I'm afraid it wont come out easily-these peel and stick are so beautiful and I could update the look for <$150 myself.
Any thoughts on just sticking it to the old tile instead of tearing it off and having to patch and make it smooth? I may just try one and see how well it sticks.

Not sure if they would stick to the shiny tile. Finishing the edges could be tricky too since you'll have the thickness of the tile. People mentioned spray adhesive to help it stick

There is the option to paint the grout. I haven't looked into it deeper because our kitchen and bathrooms are a total gut. I think apartment therapy and other websites have mentioned it.
