I heard Raichlen talk about this book once on NPR, this goes well beyond smoking meats. He does things like desserts, cocktails and butter. It's very non traditional.

Thanks for this reminder about these. Easy buy now. Ultimately it's a cookbook, so if I find it useful, I will buy a real copy.

I wouldn't say Franklin is higher quality. Steve is sorta BBQ royalty. Both Steve and Franklin have shows on PBS you should easily be able to find for free. It's isn't optimal to pull up a video and peck around at the slider just to get something like a smoker temp. All that said, I think this is well worth the equivalent of four hours of pellets at 250.

Steve has lots of great recipes and has traveled the country and world - it is always interesting to mix and match some rubs, sauces, and methods.

But seriously, if you like storing large physical copies of books, do not buy this. I hate physical books, even with the inconvenience of having to flip through pages like a normal book, I'd still rather have this kindle version.

I have the physical copy of this cookbook and it's great. I'll buy the kindle version now so I can ditch the physical book.

1. It's only $2
2. Information from different experts with different knowledge is always good
3. Raichlen has a way deeper anthropological knowledge of how bbq relates to the history of humanity and it shows in the wide array of uses he gets out of the different techniques and equipment (whereas Franklin is more up on the modern american concepts of bbq). So if you want to wow your guests with an out-of-left-field smoked dessert you reference raichlen, if you want a consistent, compliment garnering brisket you go with Franklin.

I have this Kindle book since it went on sale a few years ago. I also have a hardcopy of his BBQ Bible that I found in a local thrift store. His seasoning and marinade recipes are pretty good. That said, I remember watching one of his BBQ shows and saw how he couldn't manage his fire throughout the whole show and burnt most of his meat. The comment section was pretty hilarious to read. HAHA!
