Let's assume I pay upfront for S21, trading in an S10 as part of the promotion, giving me a few hundred $ rebate right away. The remainder of difference from $800 and what they give for the S10 is given to me in bill credits over 48 months, right?
What if I want to do this type of trade-up deal again in 1 year? Do I continue to get the remaining credits if I sell the already-paid-off phone? Or do the credits stop at that time?

If after 12 months you wish to upgrade to a new device you have 2 options I believe:
1) If you're on EIP (payment monthly installments for a device) you have to pay off the remainder that's due.
2) If you paid up front for the device then you can trade it in and get a new device.
If after 12 months you wish to cancel the line then credits will stop coming.
